WIAW–Back to School!

Happy Wednesday! You all know what that means – What I Ate Wednesday! If you aren’t familiar with WIAW, head over the Peas and Crayons to see what it’s all about!

So yesterday was my first day back to class. Technically we were supposed to start Monday, but go the day off for MLK. Sadly, this means we have to make it up at the end of the semester… Thanks law school.

Anyway, I actually only have one class on my Tuesday schedule! Unfortunately, it started at 8:30am… Since it takes me an hour to get to school, and I’m a freak that likes to get there early for a good seat the first day, I decided to leave at 7 to get there. In law school, most teachers have assigned seats. You pick a seat the first day, sign your name on a seating chart, and that’s that! Hence the importance for getting there early. I’m a fan of the second row. Close enough to pay attention, but not up in the teacher’s face.

Now that you know way too much about my seating preferences, it’s time for breakfast. Since I needed to leave early, I decided to prep my breakfast the night before: overnight oats!

I’d had some success on Saturday with my Dough Boy Overnight Oats, but this time I decided to try out some Chobani yogurt in my oats, an idea I got from Julie’s blog, Peanut Butter Fingers.

I finally found some of the new Chobani flavors, so I decided I wanted to try one out: apple cinnamon! The night before, I combined 1/3 cup oats with 1/3 cup almond milk, a bit of water, 1 T chia seeds, and 1 container of Chobani greek yogurt. I also threw in some cinnamon and stevia. I mixed this all together and then set it in the fridge overnight.

In the morning, I added a bit more almond milk to mix it up, some walnuts, and some chopped apples on top! It was delicious!

I left my apartment at about 7am and headed off to school. At first I thought my timing was great since it was raining and usually my commute takes longer in the rain. However… I managed to arrive to my first class 40 minutes early.

Where to sit???

After class it was time to eat again (I’m trying to follow Jamie Eason’s small meal plan of eating every 3 hours) and I was hungry too! I had a Lara bar that I’d bought at home but never had the chance to try. It was a new flavor for me, Chocolate Chip Cherry Torte.

It was very sweet and delicious, however I didn’t notice until I’d started eating that it has 22g of sugar!!! That’s a lot. I’d probably choose bars with less sugar next time. Perfect combination of chocolate and cherry though, neither too overwhelming! Just right.

When I got home, I did some cleaning and some reading and then was starving for lunch. I decided to have some of the Crockpot Chicken and Rutabaga and Greens Stew that I had made this weekend. It was delicious! Tons of chicken though, I think next time I’ll add even more veggies to the mix! On the side, I had one carrot cake protein bar with some peanut flour sauce on top!

As an afternoon snack, I had the last bit of Greek yogurt that I had in a tub, mixed with some stevia and cocoa powder to make it chocolate! I also had an unpictured rice cake with a bit of almond butter and cinnamon.

For dinner, I made up a veggie mix (steamed bean sprouts, carrots and celery) topped with two turkey muffins. I was going to eat it with Coconut Aminos (a soy and gluten free version of soy sauce) and nutritional yeast, but right after taking the picture I changed my mind and used Annie’s Lite Honey Mustard. Good Choice! With the turkey muffins it almost tasted like chicken fingers dipped in honey mustard (almost).

I realized I’d had zero carbs! So I made up a protein cupcake! This one followed my regular recipe (1 T flour, 1 T protein powder, 1/4 tsp baking powder, stevia, 1 T applesauce and 1T milk) but I also added some lemon extract. I served it with some peanut flour sauce! Aaaaaand, definitely also made another with cinnamon instead of the lemon extract. Perfection.

Since I started eating dinner at about 5:30 (yes, I should live in a retirement home), I was getting hungry a little later while reading. I decided to try out the other new flavor I got: Blood Orange. I served it with a sliced up half of a banana and a spoonful of peanut butter! I also had a piece of dark chocolate on the side.

At first I wasn’t sure about the whole blood orange thing, it seemed like such a weird yogurt flavor. But I actually liked it! I’m not sure I’d use it for overnight oats, but it was pretty good to enjoy on it’s own!

 

What’s the weirdest Greek yogurt flavor you’ve seen or tried? What’s a flavor you’d love them to invent?

    I LOVED the apple cinnamon – the blood orange is still in my fridge!

      it was good! And perfect for overnight oats because it’s an easy flavor to mix with others, and add in more cinnamon!

    The weirdest one I’ve seen is probably the same – Blood Orange. I’ve had it and its good, quite tangy though!

    You get so many different flavoured greek yoghurts in the US, we just seem to have plain. We do get some odd yoghurt flavours, my fave was a hazelnut yoghurt!

    I am always amazed at how much sugar those types of bars have, and they are supposed to be healthy! Oh, and coconut aminos!? How have I never heard of these!? Awesome!

    In terms of new chobani’s, I like the apple cinnamon and blood orange but I’m not too sure about the passionfruit.

    Hah, I’m also a nerd and get to class super early. I also like the second row for the exact same reason- close but not toooo close 😛

    all of your eats look mighty tasty! i’ve been wanting to try out the apple cinnamon chobani flavor too – it sounds so good. i actually just tried out jamie eason’s carrot cake protein bars the other day too, but mine turned out so bad! i don’t know what happened… i think i added too much stevia? who knows, but your’s look so much better than mine did!

      Mine are getting worse as they sit in the fridge, they’re getting too dry to eat alone. I used gluten free baking flour so that also may be part of the difference. Otherwise I like them, they were way better the first day! Haha

    oo i hadnt heard of blood orange flavor. I need to try that asap! I always LOVED the first day of school. Even in college I would be all giddy and excited and couldn’t sleep well the night before my first day. I am a nerd, I know!

      It was so good! I had a blueberry tonight and just kept thinking I wish I had the blood orange!

    I’m always ridiculously early for everything. I drive my friends nuts because I always like to be at the movie theater at least an hour before the movie even starts! 😛

    That chicken stew looks amazing! Such a perfect warm meal for the winter!

      haha, movies are one thing i’m never early for, I learned in High School how to arrive right at the movie start time so you don’t see any ads. Although not recommended if you know the theater will be packed!

    I was notorious for being early in college. In fact, I did an internship a few summers ago where I got to travel around the east coast with a partner and shoot interviews with amazing alumni. My partner (a boy) was always griping about my constant need to be early, but ended up thanking me when it was all over for keeping him on time! Punctuality, unfortunately, doesn’t carry over into my personal life. (I keep the boyfriend waiting most evenings we go out!)

    Since I dont eat diary I never tried any actual Greek yogurt but I love So Delicious greek style yogurt. They don’t have all those awesome flavors yet though.

    I always arrive early the first day. Even though there are no assigned seats everyone always sits where they sat the first day. I try to stay in the middle isle. My classrooms are small so many only have about 5 rows lol.

      I haven’t tried the So Delicious greek yogurt, I never see it anywhere! I’m glad to know it’s good though!

    I’m loving the new Chobani apple cinnamon flavor! Haven’t tried the blood orange yet, but I’m hoping to find it soon! I’m a fan of some of Fage’s “strange” flavors–like mango guanabana. 🙂

    I’ve been on a Jamie Eason recipe kick lately too. I’ve made the carrot cake protein bars, the turkey muffins and the cinnamon swirl bread, but my favorite recipe (by far!) is the pumpkin protein bars. They’re SO moist and delicious. If you haven’t tried them, get on it, girl! xoxo

      Yea, my school is so weird to me, the whole thing is a 10 story building! You take the elevator to go to classes!
