WIAW–Week Off!!!

Hey everyone!

So this week has been CRAZY! And today’s WIAW is from my first day with nothing but errands and lounging around to do in a loooong time! Let’s rewind: I had my last week at my internship, I ran 15 miles and then flew to KC, I drove to Colorado Springs and then climbed a 14er solo, the next morning I flew to Boston for HLS, and then I came home, ran 16 miles and drove 2 hours south and back to get MOLLY MOLLY!

Whew! In other words, the food I’m showing you from tuesday is zero effort food, and mostly those things I missed during all the time I was away (prepare yourself for some repetition…). As usual, thanks to Jen at Peas and Crayons for hosting What I Ate Wednesday!

Peas and Crayons

For breakfast I had plenty of time in the morning (the only to do item I had was laundry!) so I made myself a bowl of Apple Pie Oats.

They were disgusting. Couldn’t finish them off… ha.

A while later I finished off some carrots that survived my time away in the fridge with some TJ’s salsa and Justin’s Honey Peanut Butter. This stuff is AMAZING! It’s by far my favorite Justin’s flavor!

After my snack I headed to the gym for a yoga class. I did 10 min walking on the treadmill and then went to the class… I left halfway through. The teacher was doing very advanced moves and holding them for a really long time. Basically I’d attempt the move, not be able to do it and then sit there and stretch until she moved on… I left and did some upper and lower body leg weights. I needed to run some errands (including the grocery store!) after the gym so I snacked on a mini lara bar.

Once I got back I made up a quick salad with some cucumber, smoked salmon and then a Greek Yogurt dip from TJ’s mixed with milk to thin it out.

I had a light lunch because I’d been dying to have some more of my protein ice cream! I had it with some PB2 mixed with Sunwarrior Protein Powder, frozen berries, and then the last few mint M&Ms that I found in my freezer!

In the afternoon I was craving some more frozen berries, so I had them with milk and a little almond butter as well!

Since I had lunch 1, lunch 2, and my snack so late I wasn’t super hungry for a real dinner. I had the rest of my smoked salmon, some cucumber and more of that amazing Trader Joe’s Greek Yogurt Dip!

Afterwards I had some more protein ice cream, but this time I put STUFT Mama’s coconut cookie dough crumble on top!

I ended up having some more frozen berries after this, just couldn’t get enough!

I hope I got all of those cravings out of my system! Haha, I missed my protein ice cream!

    All of your food looks great! I have GOT to try freezing berries. My daughter asked me if we could do it to strawberries and bananas and throw them in a blender.

    My favorite is Sunflower Seed Butter. oh my gosh good! I haven’t tried too many though! I try not to buy certain ones (like cashew!) because I might not have any control!

    Ohhh berries, milk, and almond butter?? That sounds amazing! I need to try this concoction haha. Hmmm favorite nut butter… maybe Justin’s Chocolate Hazelnut butter. I hardly ever buy it but I love it!

    I am planning on making those apple pie oats TODAY aka right after I write this comment because I am starvin marvin, they look glorious! I actually tried that Trader Joes dip for the first time in California and yeah, freakin delicious… except I ended up eating about 1/2 of the container the first time I tried it… 🙂
    Okay so I have never tried that type of Justin’s but if you say it’s the best, then I need to get my hands on some. I usually go for the maple almond butter (and fun fact that was the first nut butter I ever had when I attempted to get over my fat fears… so it holds a special place in my heart!), but yes, will be looking for that flavor!

    I miss eating more complicated meals when I am away, things that take time (and ovens) to prepare. So far in college I’ve missed my food processor, baking kale and spaghetti squash, and using my grill whenever I felt like it 🙂

    My favorite nut butter is almond butter. Unfortunately right now I can’t digest fats at all! But, when I get back to normal almond butter or sunbutter will be at the top of my list!

    That protein icecream looks awesome! Any substitute ideas for the PB2? That used to be my favorite nut butter before my peanut allergy came along.

      When I’m out of PB2 I’ll sometimes make “Frostings” out of protein powder, mixed with either a little bit of cinnamon or with cocoa powder! You can also use maple syrup, or even just melt down some nut butter so it’s a little thinner! I’ve also chopped up fresh fruit and microwaved it for about 20 seconds to get a syrup consistency and then mix in a bit of stevia or sugar, that’s a great topping too!

    Happy protein ice-cream made the list…although it could have used a few more mint M&M’s in my opinion. 😉

    Never tried that TJ’s dip, but it sounds delicious, especially atop a salad. Good idea. Hope you get in some more rest and down time. Sounds like you’ve been quite busy.

    Awesome you climbed Pike’s Peak. I hiked up to Barr Camp once and then ran back down. Such a fun day.

      Lol I would have used the whole bag but that’s all I had left! And I’ve never hiked the front side where Barr is, I did the back last week since the round trip hike is half the distance from the front (13 vs 26 miles!).

    I always miss my breakfasts… oatmeal, overnight oats, or my protein pancakes.

    As for my favorite nut butter? That’s a tough one! My favorite peanut butter is Adam’s All Natural Crunchy, and my favorite almond butter is Justin’s Vanilla! 🙂

    I live for smoked salmon – I could eat it every day. Scratch that, every meal. 🙂

    I’ve never tried Justin’s but considering how everyone raves about it, I probably should. Now if only I could find it in Canada…

    That Greek yogurt dip looks delicious! The foods that I miss when I am away are normally sweeter things. I miss creamy smoothies and hot oats with my own ingredients. My favorite nut butter is Trader Joes Almond Butter.

    Apple pie oatmeal is fantastic; I love making it in the fall when I crave warm oatmeal almost all the time! And that Greek Yogurt dip also looks delicious; I should go to the TJs near our house and see if I can find it…My favorite nut butter is probably the freshly-ground almond butter from Whole Foods, though I enjoy the Maranatha brand as well. Sunflower seed butter probably comes in second; I love peanut butter, but have become somewhat wary of it because of the aflatoxins that it often contains…

    Trader Joe’s seems like it’s pretty much the best place ever to get easy-o-prepare foods that are relatively healthy. I love the idea of eating the dip with your salad. When I’m traveling, I miss getting to make green smoothies easily, or at all if I’m without a blender.

    How good is smoked salmon? I’ve been on the hugest kick lately!!

    Also, where have you found sunwarrior in Chicago? I’ve been keeping a look out but haven’t spotted it yet.

      I found it at Life Spring Health Foods, they have a few locations. If you go to the sunwarrior website you can search for stores that sell it!

    Your food looks awesome! I LOVE frozen berries, and I eat Greek yogurt & protein smoothies like it’s going out of style. HAH. 😉

    l love apple pie oatmeal! Have you ever tried making yours with both apple and banana? It’s my favourite way to make it! And speaking of oatmeal, that’s one food I definitely miss when I’m away.

    Also I seriously wish we had TJs in Canada… that Greek yogurt dip looks amazing!

    My favourite nut butter is soy nut butter. I’ve heard it tastes sort of like peanut butter, so I feel like I’m not missing out too much. 😉

    Katie- It all looks so delicious!! I love having quieter days when you have the time to make the food you REALLY want to eat and enjoy it. You deserved a day off – you’ve been so busy!! Thanks for the great meal/snack ideas – definitely giving that protein ice cream a shot! 🙂

    oh my gosh, that molly is SO CUTE. i also am definitely going to try some of that protein ice cream, it looks amazing. i love frozen things lately – i’m hoping that doesn’t change when summer ends because i am all about smoothies right now.

    i get nature’s promise nut butter. my all time favorite is almond butter but every now and then i will get intense cravings for peanut butter or sunflower butter
