WIAW – Road Trip Style
Hey everyone!!! Soooo my computer has decided to not connect to the Internet, anywhere in Colorado Springs (currently at Starbucks… Not working) so today’s WIAW will be posted from my phone! Haha bear with me.

Today’s WIAW is from yesterday, when my mom and I drove from KC to Colorado Springs (9 hours). I had intended to get up at 5:30 to get in an 8 mile run but apparently set my alarm for 5:30pm… I woke up just after 6:30 and sprinted out the door!
During my run I had two Cliff Shot blocks and then after I had half a banana with almond butter (no picture, I was in a hurry!).
We got on the road and stopped at Roasterie, my favorite coffee place! I got an iced coffee with almond milk and 1 pump sugar free hazelnut. Perfection.
For breakfast I’d made some oats with chia seeds on the stove and put them in a container with some plain Greek yogurt (stevia and vanilla mixed in) and some fresh berries).
Then I happened to be driving while it was time for lunch so I had this new Larabar (amazing!!!) an apple (unpictured) and a couple small pieces of beef jerky. It had soy sauce on it But I bought it anyway in hopes it wouldn’t bother me… It did. Dumped that.
When we switched I had my lunch: a salad with mushrooms, black olives, roast beef and manchengo cheese with olive oil and balsamic vinegar. So good! I also had a couple M&Ms my mom shared.
Later when it was my turn to drive again I needed a pick me up so I got an iced coffee from McDonald’s. Great story. I had just been telling my mom that I’m not a fan of McDonald’s because they take normal food and make it unhealthy. I went in and ordered a medium iced coffee. She handed it to me and it looked like milk. I asked what she put in it and she said cream and sugar… I asked how much cream. 5 containers!!! FIVE! Without me asking for any! Luckily she offered to make another with just one cream and no sugar. Case and point.
It was about dinner time when we got there and we ended up going to a Mexican restaurant called Crystal Park Cantina. It was delicious! Although I want impressed with their chips: very thin.
We both wanted enchiladas (made with corn tortillas) so my mom ordered the spinach and portobello and I ordered chicken with manchengo cheese and we each traded. They were both delicious!!! I was very impressed and it was quality Mexican, not greasy or overly sauced. So good!
After dinner we went to an ice cream place suggested by a friend. I ordered Rocky Road and Strawberry. Unfortunately neither of us were impressed and ended up tossing most of the ice cream. At least we tried!
Then it was to home and in bed! I hope you all have a great Wednesday!

That Larabar looks so delicious! I have yet to try a Larabar, mainly because they tend to be so pricey…Though I HAVE made homemade Larabars with dates, nuts, and cocoa powder:) Are they worth the cost, or do you think homemade ones are just as tasty? That Mexican food looks delicious as well; it is always nice to find authentic, high-quality international food while on a road trip (A.K.A,, not Taco Bell:D).
I’ve never made my own so I can’t really compare! I just tend to buy them occasionally, I usually just get whatever bar is on sale!
I have never been disappointed with ice cream, that is terrible! I just had mexican this weekend and was talking about how I hate over-sauced enchiladas — also, corn tortillas are the absolute best!
Normally I think corn tortillas are too dry but these were perfect!
I love road trips! In the UK we have gas stations that have a store called Marks and Spencers and they do the best healthy options, fruit salads, smoothies, grain salads etc, they are my road trip treat š

If by some bizarro reason you ever come back through Nebraska on I-80 and you want some good Mexican, you’ve got to stop in Lincoln at Pepe’s bistro! http://pepesbistro.wordpress.com/ It’s a vegetarian Mexican place that only cooks w/ locally sourced ingredients. SO amazing! Good luck in Colorado!
Lol I’ve never actually been to Nebraska, which is weird since Kansas City is so close! If I’m ever in Lincoln I’ll have to check it out,!
I HATE McDonald’s a lot. Their oatmeal makes me sad because they put so much junk in it.
I never understand why it can’t just be oats!
I usually pack an almond butter and banana sandwich on brown rice bread for road trips. It’s incredibly filling and holds me over for long stretches. The only problem is it makes me incredibly thirsty!
I can’t say I’ve ever had a bad ice cream experience before. That’s really unfortunate, how do you screw up ice cream???

Oh. That Mexican food….LOOKS AMAZING! Seriously. Enchiladas are without a doubt one of my favorite savory foods. I’m so jealous!!
I haven’t had many bad ice cream experiences because I’ll eat it in just about any way, shape, or form BUT the other night I went to eat the last little bit of the carton and was severely disappointed when it was just freezer burnt and icky tasting. Guess it was a sign that I didn’t really need dessert?
Ahhh freezer burnt ice cream is such a disappointment!

The larabar sounds delicious. Once when I was 13 before I found out I had celiac’s disease I ordered a coldstone creation with cakebatter, cookie dough, brownie, and reeses. Needless to say I was sick for 2 days. Haha. Safe Travels.

i love mcdonalds ice coffee but one time that happened to me when I asked for milk they put in cream! i was so annoyed i ended up dumping it because it tasted disgusting!

okay so despite the sort of sacrilege of throwing away ice cream (though, hey, way to go willpower!) i think i can forgive you for that. road trips are super hard for me to maintain any semblance of health on, so way to go you!
also i am SO with you on the mcdonalds coffee thing – it doesn’t even taste good with all that stuff in it!
