A Delicious WIAW

Hey everyone! I hope you all are having a great week! So far mine’s been pretty good, things have picked up a little bit around my office, mostly in the sense that I’ve been included in a lot more meetings and conference calls, which means less time in front of the computer!

Today’s WIAW eats come from Monday! It was a pretty normal day in the office so nothing too exciting, other than the fact that I’m looking back now and remembering how delicious all my food was! What I Ate Wednesday Sensible Snacking

For breakfast, I started off with a delicious bowl of oats! I made my Apple Pie Oats, but instead of mixing in apple pieces, I mixed some chopped up peach! It was pretty good if you ask me, definitely a little more Summery!

For lunch I had thrown together something pretty quickly, but it turned out well! I mixed 1/2 cup of cooked quinoa with 1/2 cup cannelli beans, and then threw in some steamed eggplant and squash, along with marinara sauce! Easy but delicious!

I love having a little something sweet after lunch, so I keep these candies in my drawer. They are French candies, or “bon-bons” that my French teacher used to give me for my birthday! I love them! I’ve found them at both Whole Foods and World Market.

The afternoon snacks that I had packed for the day were carrots, almonds and a small piece of dark chocolate, and a Two Degrees Chocolate Banana Bar.

I didn’t end up eating the almonds, but I ate everything else. The Two Degrees Bar? AMAZING. Let me repeat that, AMAZING!!!!! Seriously. I’ve had another flavor, but this one was so good! Seriously. Go eat one. Now. I’ll wait.

Done? Did you like it? Of course you did.

Now on to dinner! When I got home I wasn’t feeling well, but after a while I started to crave a tortilla. Since I figured I should throw in some veggies, I decided to make a pizza! It’s a brown rice tortilla topped with marinara sauce, spinach, sliced tomatoes and mozzarella cheese. Since I didn’t have any hummus (my go-to tortilla pizza dip), I used some cashew dip that I’d made from Elise’s new FODMAPS book. So good! It was the perfect replacement.

Eating the pizza totally gave me my apptetite back, and I was craving something salty. I didn’t have any popcorn or chips or anything like that, so I made some out of veggies! I sliced up some zucchini and eggplant, tossed them in some olive oil, a bit of salt, and garlic powder, and then roasted them in the oven at 450 for about 20 minutes. Served with ketchup!

A little bit later I was craving some dessert, so I had some plain Fage Greek yogurt, with some PB2 mixed with protein powder and cocoa powder, and then some fresh berries on the side! Totally hit the spot.

I definitely think I did a great job with healthy snacks! Loving this theme, Jen!

And of course I ate that while watching Arrested Development. I ran out of How I Met Your Mother episodes on netflix, so I’ve moved onto Arrested Development. I’m enjoying it! Anyone out there watch?

    Yumm I love all your food! My healthy snack yesterday was a kashi bar and carrots. A treat was brownies with a scoop of french silk ice cream!

    I love the look of your pizza! Yesterday I had carrots dipped in Sabra hummus for my healthy snack, so good! 😀

    I watched every season of that show two summers ago. Ok, girl I want to live with you to have you cook for me. That all looks amazing, especially the dinner with the zucchini fries and pizza. Yum yum yum.

    Your pizza looks so good! I think I may need to make one for dinner now. I used to watch Arrested Development all the time; it’s pretty hilarious. I’m on such a How I Met Your Mother kick right now though, I watch at least two episodes before bed!

    I love those little candies! I never know what they’re called haha. Also, your tortilla pizza gets an A+ in the looks department! It looks like a pretty thin crust pizza from an authentic Italian restaurant!

    yesterday i tried banana soft serve for the first time, and i loved it! it TASTED like a treat, but it was actually pretty darn healthy! i love when that happens. 🙂

      I want to try it out, I’m just worried my magic bullet won’t blend it quickly enough and I’ll have to add milk and it will end up soupy… lol always seems to happen to me. I’m going to try it though soon! I have a banana frozen in the freezer!

    I love Arrested Development! I just finished How I Met Your Mother too – I cannot wait until the newer episodes are on Netflix.

    adding peaches to your oatmeal sounds so good!! lately i’ve been on a protein waffle kick and i’ve been adding blueberries to the batter, so maybe next time i’ll do peaches.

    one healthy snack i ate yesterday was a big bowl of plain greek yogurt with apple butter and blueberries mixed in. and a treat i had was a venti vanilla cappuccino from starbucks! i was working a 7hour shift and treated myself to one in the middle of it – best part was that it was free (since i have a gold card and buy way too much coffee..hah)! and since it was free.. go big or go home, right?!?

    Looks like a great day of eats! I love the tortilla pizza idea, I’ve been craving pizza so I definitely need to give it a try. Arrested Development is pretty much the best show ever. Love Gob, I want to re-watch the entire series!

    I’m totally into qunioa salads for lunch these days too. And adding peaches to oats is always a hit– so happy for summer fruits!

    Ohhhh that pizza looks divine! I LOVE pizza! YUMM. Healthy snacks include raw veggies in hummus, sweet potato fries, and dark choc covered almonds. YUMMMMM

    Love the idea of mixing Greek yogurt with PB2 and cocoa powder! Can’t wait to try it. 🙂

      I like it best when you make the PB2 first, rather than just mixing the powder into the yogurt! Sooo good!

    Ahh I haven’t had those candies in ages! I can’t believe I forgot about them all this time…definitely will be hunting them down at WF this weekend. I loved Arrested Development. About half a year ago I zoomed through the entire show in a few weeks 🙂

    Katie-I’m looking for a new one-what kind of protein powder do you use?

      It’s definitely expensive, but I use Vanilla Sunwarrior. I loooooove the taste and it mixes so well with things that I’m afraid to try another!
