WIAW–Road Trip!

May 23, 2012

Happy Wednesday everyone! I thought for today’s What I Ate Wednesday I would mix things up by showing you all my eats from yesterday, the day my mom and I drove from Kansas City to Colorado Springs (9 hour drive!).

If you are new to WIAW, check out Jen’s blog, Peas and Crayons. Jen hosts WIAW each week and it’s a great way to find new blogs and great recipes!

I knew that with sitting the car all day I would want to get in a run first thing to get out some energy! I headed straight to the gym after getting up and ran 4 miles, stretched, and then headed home to shower and finish packing.

I ate some breakfast before we left: plain Greek yogurt with stevia and vanilla mixed in, blueberries and strawberries, and a piece of Udi’s gluten free bread with almond butter.

I also stopped and got a final Café au Lait from the Roasterie! Oh how I miss that place..

Our first stop on the road was a quick rest stop to use the restroom. I, however, had no idea what was in store for me.

I saw a sign leading to the observation deck. Of course! The observation deck! In Eastern Kansas… Obviously I had to check it out.

And then I laughed (as expected) when I did. I mean, come on, look at that view:

Since fast food on the road is pretty rough for me, I just packed a bunch of snack food to eat on the trip. A few hours later my stomach was grumbling for lunch, so I had a veggie tray, and I replaced the dressing that came with it (it had wheat and soy) with some Annie’s Lite Honey Mustard. Pretty good!

I also had a few new chips that I found – brown rice snaps, and half a packet of buffalo jerky that I found at the Natural Grocers. The chips weren’t as great as I was hoping, but not bad.

I also sipped on this Chia Seed Kombucha throughout the trip:

A couple hours later I had an apple and the rest of the buffalo jerky:

Then, during the rest of the afternoon, I snacked on some of these freeze dried pieces of fruit, a few more of the rice snaps, and some grapes!

Beware of the giant hand! Right as I snapped the picture my mom was grabbing the bag to move so she get her phone out from the consul it was sitting on…

We finally made it to Colorado Springs around 6:00pm (7pm KC time) so we were hungry! After unloading, we headed to one of my absolute favorite places to eat for dinner: The Golden Bee! I forgot to take a picture, but I had what I normally get: half a reuben on gluten free bread, and a side salad.

After dinner, fro yo was an obvious choice. We’d had a long day. The best part? The place we went had birthday cake flavor! You may be thinking… um, Katie, a lot of places have that flavor. Well yes, they do. However this one was GLUTEN FREE. That’s right, no gluten. Most flavors based on any kind of cookie or cake are not gluten free, so this was a huge find for me! So of course that’s what I got!

We headed home, watched a little American’s Got Talent, and then fell into bed. I was tired!

Do you bring your own food, or eat at fast food places on road trips?

Ever seen equally amusing observation decks?

I usually do a bit of both. I pack some snacks, and stop along the way. I try to eat at healthier restaurants, like Subway, when I can.

I usually bring my own snacks on road trips – with the exception of maybe a lunch at a restaurant on the road. Grapes are a really great road trip snack!

lol can’t say I have ever seen a sight like that! I bring my own meals/ snacks on trips. Mainly snacks because if I am driving, I get bored easy 🙂

I really want to take a road trip like…now.
wait. was that what there was to observe? all those cars and trucks? interesting.
I really need to try birthday cake froyo. I usually get plain, but I might just have to try it.
I always bring my own food everywhere, I just like to know that I’ve got something healthy.

I usually bring some snacks on my own, but look for healthy meals at rest stops. I’ve had those brown rice snaps before too, and I must say they didn’t really excite me.

I usually bring some snacks (definitely jerky), but I also stop at places along the way. However, that veggie tray is a great idea!

I tend to take my own stuff too, or I make sure we stop at places that have M&S food which is a chain of stores in the UK that always have some good options!

I wish we had some stores with healthy options! Here it’s mostly gas stations with chips and candy!

  10. May 23, 2012 9:32 am

I usually bring my own snacks. Its hard to find healthy meat-free food on the road!

  11. May 23, 2012 9:37 am

I try to bring my own snacks but sometimes it doesn’t work out that way so I try to find healthier options on the road. How is the chia seed kombucha? I’ve been wanting to try it!

  12. May 23, 2012 10:55 am

I love Roasterie coffee! And, I usually pack my own snacks!

  13. May 23, 2012 11:44 am

You chose some great snacks for the car! ANd YES, of course fro yo is required after a loooonnngg day! YAY you made it 🙂

You’re right, that is a sorely pathetic excuse for an observation deck. Gives western KS a bad name…

I almost always bring my own food on road trips. I’m super picky about fast food (as in, I don’t eat it unless absolutely necessary) so packing a bunch of tasty snacks suits me just fine 🙂

  15. May 23, 2012 3:42 pm

Haha I’m the SAME way with road trip foods. I pack tons of snacks because I just dont’ like a lot of fast food options. (I don’t mind Subway, but I’m sure that’s not good if you’re GF!)

That’s awesome you could have the cake batter flavor!

  16. May 23, 2012 8:37 pm

Froyo is SO necessary!! and AHH I need to find me some buffalo jerky!

  17. May 24, 2012 1:07 am

I always like to bring my own snacks when I go on road trips! Not only because I don’t like the unhealthy fast food joints along the way, but also because I become a grumpy person when I get hungry! ha
Gluten free cake batter?! That is so awesome! Like it was made for you! 🙂
