Thursday Thoughts

By the time Thursday comes around, I’ve found my brain is pretty fried. So I’ve decided to start a new weekly segment called Thursday Thoughts. Last week it was labeled “Into the Depths of my Mind.” This sounds a little less frightening. Granted, with my fried brain, I’ll probably forget about this next week and do something else… We shall see!

1. I can’t stop thinking about Froyo. I haven’t had a chance to go get some since Sunday. I know, tragic, right?

2. I FINALLY tried rutabaga fries! I peeled a rutabaga with a carrot peeler (okay, I guess it’s a vegetable peeler, but I use it for carrots the most so that’s what I call it) and then chopped it up into fry-sized pieces. I tossed them in olive oil, a little salt and some garlic powder and then baked them at 450 degrees for about 15-20 minutes. I was really surprised – they tasted like real fries! Definitely try this out.

3. I made a frittata!!! Okay, you know the name of my blog. I’m a huge fan of oatmeal and a huge fan of sweet breakfasts. The one time I even managed to try something new, it was still sweet: french toast. But I was craving eggs so I made a frittata! I cooked some sliced tomato and spinach in a skillet and then added 1 egg and 1 egg white beaten. I put it in the oven and halfway through added a bit of cheese on top. I think it baked around 10-12 minutes?

4. I have grocery store issues. Every time I go in for just a certain item, I come out with several impulse buys. Ex: I went in for pumpkin and egg whites. Came out with those items, plus rice cakes, a kombucha and 2 Chobani yogurts. Had to resist buying some Chex cereal. But the Mango Chobani was the best flavor I’ve tried so far. So totally worth it, right?!

5. Not only have I started watching Saved by the Bell on Netflix, I’ve somehow discovered Giuliana and Bill and LOVE it. She’s hilarious. Plus it’s one of those shows that I can just leave on when doing things around my apartment, and it’s fine that I’m not actually watching because they narrate everything!

6. After 20 months of living in a studio, I’m starting to crave a real house. I feel like I live in a box! I want a separate kitchen, a separate living room, an office, and a bedroom! It’s just weird to do everything in one space, so I’ve developed a need to separate out my apartment. I have one table that I do all my school work and blogging as well as eating and just “hanging out” at. I need a separate space for eating and for working. So I’ve decided to get a “desk,” but I’m trying to do so at the cheapest price possible. So far the best I’ve found is this IKEA table. Other thoughts or ideas? It’s $69.99 with shipping…

7. Everything happens for a reason. To be honest, I don’t have a lot of self-confidence. I’ve realized over the past year or so that I often think that I’m not good enough. I think a lot of people have this issue. But for me, the immediate concern is my half marathon on Sunday. I KNOW I can complete the distance, but it’s the pace that scares me. I imagined the whole race with my running buddy being there and helping and cheering me on. I found out yesterday that she has to drop out. My reaction? FREAK OUT. But you know what? I think this is the best thing that could have happened, because now I have to believe that I can do this myself, that I am good enough. I need to find that self confidence!

    Your going to do GREAT in the half!!!! Believe in yourself!!! My Thursday thought is that I can’t wait for Friday…. It’s been one lonnnnng week.

    I totally know what you mean about wanting a house! My boyfriend and I are trying to find a place thats decent sized to call our own and then get a house. I hope it happens soon! Living at home has it’s ups and downs! :\

    1) Those fries look awesome! Must try.

    2) Who knew that Benny and I unleashed such a monster when we took you to Yogurtini on that fateful night? It’s pretty freakin’ amazing, isn’t it?

    3) About your upcoming half marathon: YOU CAN DO IT! I think you’ll do amazing. When I did my first half, I was scared poop-less. I’d only ever run 10 miles in training – where was that extra 3.1 going to come from?? On race day, the biggest motivator I found was the crowds. They were absolutely amazing in Lincoln, so I can only imagine how great they’ll be in Chicago for you! I couldn’t believe that so many people would get up early on a weekend to cheer on people running obscene distances, yet there they were. I fed off their energy and it was the boost I needed to get through a race that I too ran by myself. You’ll get through it bud!

      Haha don’t worry, I got hooked on self serve frozen yogurt way before that. Yougurtini is just the best place I’ve been to! And I’ll be sure to mail you your penny. Thanks for the encouragement!

    You’re gonna rock the half! It’s very much a mental race, but with that attitude, you’re going to do great. Don’t put too much pressure on yourself since it’s your first half.

    My Thursday thoughts — can’t wait for the weekend! I get to see my Mama and Dad this weekend!

      I can’t eat much candy because white sugar does NOT agree with my digestive system. Trust me, there were a lot of candy purchases in college… a lot! haha

    mmm i’m always thinking about froyo too… 🙂 love the stuff!! you’ll totally rock the race this weekend girl! i can completely relate to not always feeling “good enough”, but keep your head up and tell yourself you’ll do awesome!

    You’ll be fine for your half, you’ve trained so well! I love swede (what we call it) fries more than regular fries!

    Love the rutabaga fries I am definitely going to give that a try.

    As for desks… what about checking out T.J.Maxx or Marshalls they sometimes have good furniture for cheap prices. Or what about a garage sale and refurbishing it? I’m not sure if you are crafty of not but it’s definitely worth a shot! Or even Ashley Furniture with some of their sales you can get stuff for pretty cheap too!

    Good luck with your race on Saturday I know you will kill it!

    I want to try rutabaga so bad, but I can never find it around here! Maybe when my husband and I are on our trips to his grad school interviews the next couple of weeks I’ll be able to find it in some random grocery stores 🙂

    Check Target and Walmart for desks. They’re sometimes cheaper than Ikea and they’ll usually deliver too.

    I bought a small desk at Target and it was pretty inexpensive. It was much more difficult to put together than IKEA furniture though.

    Also, you’ll do amazing at your half! You’ve done so much training and have worked so hard, the race will be the fun part 🙂

      I got a desk at Target for college, but most I looked at were like $120-150… haha way out of my budget

    I’m freaking about about this half too, but my reason is the HEAT. Oh my gosh are you following the weather forecast? I just read it could be a record high!

    Are you thinking about running with a pace group, since your friend won’t be there? I wish there were more pace groups (there are huge gaps in times) but I guess its cool that they have them at all.

      Oh my gosh, I am so nervous about the heat! Of course the half is on the ONE DAY that it’s supposed to get up to 80! Every day that I look the forecast is hotter and hotter! And I’m definitely planning on at least starting out with a pace group. I think it will be a great way to not have to keep staring at my garmin but keep the right pace. I can just focus on putting one foot in front of the other. Send me an e-mail if you want to meet before the race! I can give you my number and say hi!

    Hey, just know that you can do this. Even if the time isn’t what you hoped at least you are doing it, maybe God designed this moment of your buddy dropping put to show you He is all you need and you can do this. I struggle with the same thing I am wanting to get into running something I have been doing on and off, here and there for years but I want to accomplish a marathon. At times I have they crazy courage of you can do this followed by pure panic of failing. I just think it is awesome you are trying this we may fail here and there or experience bumps along the way but that’s what teaches us. So hang in there know your blog followers hveyour back we believe in you. Can’t wait to hear about it Monday! (:

    You’re gonna beat that half-marathon in the booty! You seem really dedicated and SO prepared. I have absolute faith in your ability! You are strong, physically and mentally, you just have to believe it. I can’t wait to hear all about it!

    As for the froyo…I’m with ya, girl. I LOVE FROYO. It makes my worst days so much better!

    Rutabega fries? Never heard of that. I’ll have to try it…

    I think my big thought of the day has been that I should never stop believing in myself. I’ve worked at my job for 10 months and honestly didn’t think I’d ever get to a point where people respect my opinion and what I do. It’s mainly because, aside from our intern, I’m the youngest person to ever work here straight out of college. Now after months of being unsure what my place is, I know my job is respected.

    Oh and I agree with every other comment on here: I love froyo.

    I want to try rutabaga fries. I read this post this morning and craved froyo all day long, so I got some tonight. They had strawberry lemonade flavor. It was awesome..and those are all the thoughts left in my brain at this moment. It’s been a long week 😀

    I don’t think I ever go to the grocery and come out with what’s just on my list. I’m totally craving froyo and gave it up for Lent 😦 Just another week!

    Once you’ve narrowed down the material and style of desk you desire, shopping around is the best way to find the best price on the type of desk you desire. There can be a huge variation in prices on the same or similar products, so shopping around really can pay off.Student Desk
